{"id":55254,"date":"2021-09-13T18:27:00","date_gmt":"2021-09-13T23:27:00","guid":{"rendered":"https:\/\/www.dev.nitu.mx\/?p=55254"},"modified":"2021-09-13T23:56:32","modified_gmt":"2021-09-14T04:56:32","slug":"promueven-turismo-gastronomico-sustentable-en-el-caribe-mexicano","status":"publish","type":"post","link":"https:\/\/nitu.mx\/index.php\/2021\/09\/13\/promueven-turismo-gastronomico-sustentable-en-el-caribe-mexicano\/","title":{"rendered":"Promueven turismo gastron\u00f3mico sustentable en el Caribe Mexicano"},"content":{"rendered":"<p>Para promover el turismo gastron\u00f3mico del Caribe Mexicano mediante el consumo de productos e ingredientes locales, la iniciativa Colectivo Maya integrada por un grupo de chefs lanz\u00f3 el movimiento #PescaconFuturo.<\/p>\n<p>A trav\u00e9s de este movimiento, se busca mantener las poblaciones acu\u00e1ticas en un nivel saludable y garantizar la satisfacci\u00f3n de la demanda mundial de alimentos marinos.<\/p>\n<p>En el Colectivo Maya participan chefs de restaurantes como Kiosco Verde en Canc\u00fan, que ha adoptado platillos de varias regiones de M\u00e9xico, principalmente comida del mar especializ\u00e1ndose en tostadas de mantarraya en salsa verde y chile morita como platillo insignia.<\/p>\n<p>Nader 88 es otro de los restaurantes que integran el colectivo en Canc\u00fan, y su proveedur\u00eda viene de Felipe Carrillo Puerto, Puerto Morelos y Puerto Ju\u00e1rez. Aqu\u00ed se ofrece cocina de autor mexicana contempor\u00e1nea.<\/p>\n<p>Hacia Tulum se encuentra Mur Mur que destaca por la brocheta de pulpo en pipi\u00e1n; mientras que en el hotel Rancho Encantado est\u00e1 el restaurante Los Hechizos, en la Laguna de Bacalar, que emplea insumos de su propio huerto.<\/p>\n<p>Uno de los platillos m\u00e1s representativos es el pulpo al poc chuc servido con salsa de chiltomate y chile habanero asado, t\u00edpico de la regi\u00f3n.<\/p>\n<p>Boquinete Puerto Morelos se encuentra en este municipio del centro de Quintana Roo, cuyos platillos se distinguen por su frescura, entre los insignias est\u00e1n el pulpo, jaiba suave y pescado fresco.<\/p>\n<p>Zapote Bar, en Riviera Maya, celebra a los productores artesanales y a los insumos provenientes de granjas locales para crear c\u00f3cteles y platillos tradicionales con un giro \u00fanico.<\/p>\n<p>En este restaurante destacan Shakshuka Yucat\u00e1n, la exquisita calabaza local preparada con tehina, zataar y el postre Coulant R\u00fastico elaborado con chocolate y trozos de cacao y helado de vainilla de Papantla.<\/p>\n<p>Amate 38, adem\u00e1s de usar productos regionales, emplea m\u00e9todos de cocci\u00f3n ancestrales como el carb\u00f3n.
